Yeast and other such friends!

Crunchy baguette, sweet milk bread, crusty sourdough, soft focaccia, or pillowy pav; Jini and I are absolutely in love with bread and bread is the foundation of our friendship if i may so.We had been racking our brains for a long while about a project that would excite us, teach us some skills as well as be something I could write passionately about and 2017 is the year we started our adventure with sourdough!

It's still very early days and we are no experts but we are learning; to work cooperatively with millions of tiny living beings, to stretch, fold and coax the dough to become a beautiful boule, and it has been so much fun that we  we made it our next project. A baker's dozen; 13 sourdough breads over the next six months. We will be working with two starters, one from Vienna and the second, our own beloved Hyderabadi starter Niloufer. We will be playing with different flours, different levels of hydration, different durations of fermentation  and different flavours over the 13 breads we make.
