Nut butter cakies!

A wise person once told me that when I thought I had a brand new idea, it was very likely that someone else had already had the same idea! I was offended at the insinuation of a lack of originality in my thoughts but was proven wrong with the word cakies; the name that I came up with for these little bite sized delights; the perfect offspring of the cookie and the cake.

I thought that I had invented this cool new word, but I hit cakie on Google and thousands of pages opened up. So apparently not only am I not a dessert naming genius but I have also been living under some rock to have not known about this before!..Anyhow all that aside, these nut butter cakies are still something totally awesome and Jini's favourite way to enjoy nut butters. I was a sceptic about the world of nut butters, but through Jini's passionate advocacy of its virtues I am now a complete convert!

This cakie is a classic example of how small tweaks can up the nutrition quotient of your dessert without sacrificing the taste. They have only the tiniest bit of flour, the substitution of nut butter ups the protein content and coconut sugar has a lower GI and is a more nutritious sweetener than regular white sugar!

What you need:

  • Nut butter of your choice- 1 cup

  • Eggs- 2

  • Chocolate chunks- 1/2 cup

  • Vanilla extract- 1 tsp

  • Coconut palm sugar- 1/3 cup

  • Coconut Flour or All purpose flour- 1 and 1/2 tbsp

How we stir:

This is so super easy you wont believe it!

  • Pre-heat the oven to 200 deg C.

  • Throw in all the wet ingredients into a large bowl and cream it together till it is light and airy.

  • Stir together the flour and the sugar and dump it into the same bowl as the wet ingredients.

  • Finally toss in the chocolate chunks. Stir it in till just combined together. I love the clattering sound the chocolate chunks make when you are stirring the mix together.

  • Its a slightly gooey batter so you need to refrigerate it for about 30 minutes till it comes to scoopable consistency.

  • Scoop out the cakie dough onto a baking sheet or if you want to be fancy like us,you can use these beautiful dented trays which make the rim of the cakies extra crispy!

  • They need about 12-13 minutes in the oven, possibly lesser if your cakies are thinner. Just watch out for the browning of the edges and you are good to go.

These beauties are best when they are still warm and Jini swears by the combination of cold milk and cakies. Just dunk and devour!

I can totally picture myself tiptoeing into the kitchen in the middle of the night and eating these cakies dunked in cold milk, stealthily, with only the light from the fridge for company!

Must make Nut Butter Cakies, hide them at the back of the fridge so that no one else finds them on midnight fridge raids and and do tell us how you liked them!!
